Summary:Horticultural production in Almería has on crop diversification one of main tools to compete with other production areas. This is what happens with the pepper crop, which has introduced a new varieties, cultivars such as "snack", which have gained relevance in recent years because its market is growing in European countries because of its qualities and connotation as a health food. Given the differences that these cultivars show with traditional commercial types of protected crops in Almeria, in this work we have studied different aspects of the production and quality of 13 cultivars of pepper type snack. First we have analyzed the different morphology of the fruits of each cultivar given the commercial interest has, among others, for the packaging of the product before sale. On the other hand, we evaluate the production of each cultivar and displayed significantly lower than that of other types of most widespread crop varieties, ranging from 2.97 kg m-2 and 5.26 kg m- 2. Finally we have studied the parameters affecting commercial and organoleptic quality of the fruits: physical properties such as firmness, fruit weight and seed weight, and possessing chemical properties, such as soluble solids, pH and titratable acidity , all related to the taste of the fruit.
